Yes, I know nothing smells like Bacon, Eggs, and Coffee cooking in the morning. After a
long day in the saddle, nothing hits the spot like Steak, Baked Potatoes, and Corn on the
Cob. If you're like me, though, as great as that sounds, sometimes you just don't feel like
having to go through all that trouble.
When Hank and I trail ride or camp, he always expects good meals to be part of the
experience. That always meant a lot of work for me. Not only did I have to plan, pack, and
cook the meals, I also had to wash up the dishes afterwards. A lot of the time, after many
hours in the saddle, the last thing I was interested in doing was cooking a big fancy meal.
Here are some ideas for some great tasting but easy meals to enjoy in between the big fancy
production meals.

These meal ideas are not meant to be frugal
ideas. That's another article for another time.
These meals are ideas I came up with are things
that can be eaten cold or microwaved if you're
lucky enough to have access to one. You can
make them more affordable by making them
home-made ahead of time yourself, or make
them even more convenient by buying them
ready-made. Just keep cold (if they're not
canned food) in a cooler and you're set.
All these meals are easy because they are either
eaten cold, or easy to heat and clean up after, if
you have access to a microwave.
Breakfast: (Best eaten at the trailer before the ride)
Donuts
Danishes
Cereal with Milk
Breakfast Bars
Carnation Instant Breakfast
Breakfast Crepes (Made ahead)
Lunch: (Can be eaten at the trailer or packed in a saddlebag with cold packs)
String Cheese
Crackers (flavored)
Jerky or Slim Jims
Trail Mix
Fruit
Pudding or Jello Cups
Sandwiches
Chicken Salad & Crackers
Ham Salad & Crackers
Bagel Chips
Chips
Cheese & Crackers
Pretzels & Cheese Packages
Chips & Salsa
Chips & Spinich/Articoke Dip
Supper: (Best eaten at the trailer or campsite after ride)
Fried Chicken
Potato Salad
Cole Slaw
Chicken Salad on Rolls
Ham Salad on Rolls
Cold Pizza (ordered and picked up from your favorite pizza place prior to the ride)
Taco Salad
Sub Sandwiches (Make ahead and add condiments just prior to eating)
Microwave Meals:
Soups
TV Dinners
Nachos (add beans and taco meat, lettuce & tomatoes, all made ahead of time)
Stew
Chicken & Dumplings
Chili
Pizza Rolls
Hot Pockets
Microwaveable Pizza
Chinese Food (Bought ahead from your favorite restaraunt & reheated.
Always have plastic knives, forks, spoons, styrofoam plates, cups, bowls, and trash bags on
hand for fast and easy clean-up afterwards.
